Homemade Hummus with Fresh Parsely

I tried freshly made hummus for the first time just a few years ago at my local, very cool at the time, coffee house. I had always had it store bought out of those tubs, which is good, but is not like fresh at all.

Tahini

Bill, the great chef who used to work at my coffee house made it with fresh flat leaf parsley mixed in after you blend it up(or it turns green). It adds a really nice fresh touch.

Homemade Hummus with Fresh Parsley

2 garlic cloves
1/2 teaspoon salt
1 16 oz can chick peas
1/3 cup well stirred tahini
2 tablespoons lemon juice, or to taste
1/4 cup olive oil, or to taste
water for thinning
a bunch of fresh Italian flat leaf parsley. chopped

1.) Mince garlic and mash with the salt. In a blender toss in the chick-peas, garlic paste, tahini, lemon juice, olive oil. Add water if necessary as you grind it all together to make a nice hummus consistency. Scrape out of the blender into a bowl and mix in the chopped parsley.

My favourite snack includes veges and hommus. I love that this one is raw!!!!
